I finally get to thank you for 2 recipes that made my life easier and are favorites of my now grown kids: Black Bean Stoup and Ziti Bake.

I work full time and when my kids were in high school (they are now grown and on their own), would come home and stress about cooking for them (and sometimes their friends) on a small budget and after a long day.  The 2 recipes above are 2 of their favs (sometimes I would make small changes or additions).  When I was making the ziti bake, I could count on at least 2 of their friends showing up.  And as for the bean stoup, my mother-in-law has adapted it as well (easier than the “old fashioned” recipe she has made for years and I can never duplicate). It’s especially great with rice and pork chops for “special Sunday dinner”. Thanks! Charlene A. Perez

    I have a recipe for ya. It’s yumm and my fave cake.
    Boyo - Coconut cake for the kids.

    2 cups grated coconut
    2 cups grated cassavas
    1 tbs vanilla
    1 tsp cinnamon
    1 cup sugar
    1 tsp salt
    1/2 cup melted butter
    1 cup milk
    2 eggs beaten
    1/2 raisins and currents optional

    1. Mix coconut and cassavas together, add sugar, cinnamon, salt.
    Beat eggs add milk, butter, mix together add to gry and mix together put in pan, 13×9x2 size

    2. Bake for 50 minutes at 350 or until done check with toothpick.

    ON THE FOURTH OF JULY I MADE YOUR TURKEY BURGERS WITH THE TURKEY BACON AND CHEDDER CHEESE IN THEM. EVERYONE IN MY FAMILY LOVED THEM BUT ONLY ONE THING,,,, THEY WERE TO BIG. BUT THEY WERE SOOOOOOOOOOOO GOOD. THANX RACHAEL

    Rachael’s Whole Wheat Penne Pasta with Pest was not only healthy, but delish!
    I served it without the ricotta. It tasted just like “real” pesto. The walnuts are a plus for us old folks!

    Here’s two new quick and easy recipes that
    would be ideal for kids:

    Hawaiian Trail Mix

    1 c. dried pineapple
    1 c. dried mango
    1 c. dried papaya
    1 c. banana chips (for crunch)

    Place all ingredients in a resealable
    plastic bag, seal it and give it a good shake. Great for lunches and healthy, too.
    Remember, dried fruit has no fat, the other
    ingredients are high in vitamin B and C, and
    bananas are a great source of potassium.

    Mountain Trail Mix

    1 c. yogurt raisins
    1 c. chopped pecans (or walnuts)
    1 c. dried tart cherries
    1 c. dried cranberries

    Just place all ingredients in a resealable plastic bag, seal it, and give it a good shake. Great for lunches, and after
    school snacks! It’s chewy, and just tart enough to satisfy most tastes.
    Absolutely no sugar is necessary, since the natural sugars in dried fruit are concentrated. If your child likes some salty tastes to his/her trail mix, just add 1 c. sesame sticks or baby pretzels.

    I love a good meat loaf. My new one is the turkey meat loaf. all the recipes call for 1/4 c of green pepper 1/4 cup red pepper 1/2 cup chopped onion. Well with the price of vegies right now. when you buy a peppers and onions and you only need alittle of it What I do is in your produce department in your local stores most of then now have a mix of bulk fresh vegies cut up for stir frys and kabobs so I grab out of it the right amont of what I need to make that turkey meat loaf I take and chop up what I need then I dont have to worry about buying to much of what I cant use.Try it, Its GREAT!!!

    Also I have a great veggie tray trick. You take a Cucumber and you cut off a little of each end.You take a apple corer and you put it though the middle of the cuke push out all the middle where all the seeds are and then you take a carrot that is about the same size of the hollow cuke and then you slice it up and put on your veggie tray. It really looks pretty on your veggie platter

    On yesterday’s show, you used a potato masher and wooden spatula to crumble ground turkey. I am a Pampered Chef consultant and we sell a mix ‘N chop for $9.00 ($9.50 come September) that quickly crumbles ground beef, ground turkey, sausage, and even seperates partially frozen soups. It will also turn tomatoes and carrots into pieces so small, children cannot pick them out of soups, stews, and casseroles. This item uses only one hand, will not scratch non-stick pans, and cleans up quickly in the sink or dishwasher. I encourage you to look into the mix ‘N chop.

It is much more efficient than Rachel’s potato masher and wooden spatula combination, and only costs $9.00. It will not scratch non-stick pans and is dish washer safe.

    Rachael! Loved your Napa Steamed Rolls! I took them just abit further thou and after following your recipe to the end,I let them cool awhile then I dredged them in flour,shook excess off,then in beaten egg,and then in panko crumbs,fried them in about 1/2 in.canola oil. They were “OH! MY GRAVY” so good!!!Love your show and you,keep those great recipes and your shows on the air for years to come.

    Today on your show you were trying to help with doing away with baby bottles.

    I have a great trick which my older sister taught me and it worked for both of my children at about 12 to 16 months.

    We simply started letting my child watch the trash collection truck for a couple of weeks. Eventually we put all but 1 bottles in a bag to give to the trash collector. (I saved 1 just in case.) We then let my child give the bag to the trash collector by themselves and emphasized that he or she is now a big girl or boy and does not need the baby bottles anymore!

    I don’t know if it was because children love big trucks or if they just realize the the trash trucks never bring anything back!
