Wow!  Talk about a Hallmark moment!  I was so touched when the LML presented me with all of your birthday wishes!  I didn’t know that you could send so many hugs through a blog.  Thank you for over 1,000 world-wide irreplaceable and unforgettable messages.  I will cherish them all!

    I love your show and watch it almost every day. As a retired H.Ec. teacher I am agitated over a couple of things I see. One is the fire hazard caused be wearing long flowing sleeves. Another is setting your shopping bag on the counter where you are preparing foods later. Still another is you do not turn the flame off before you wrap the pasta pot with the shawl-like pot holders.

    Happy B~lated 40th!! I just celebrated my 48th in July … so believe me, 40 don’t hurt a bit … I dunno about the big 5-0 though. That number may make me go MMM, how’d I get here (haha). Love your 30-min meals, all your shows, your mag, your humor/wit/ energetic personality… you are so COOL! I especially love the way you LOVE YOUR MOMMA! I can so relate to that. My mom is “my world” of course my hubby is too. My mom “Phyllis” just celebrated her 50th HIGH SCHOOL REUNION from Gary High School (Gary, WV). Can you believe that? Class of ‘58 and it’s such a large class too. We had the 50th Reunion in Charleston, WV 7-9 Aug 2008. Everyone that ever graduated Gary High School was there including my two Aunts (Molly & Charlotte). It was SO MUCH FUN! I am an honorary “Gary Coaldigger” too - they gave me that privelege and honor in March 2008. You and you’re mom look so “into” each other. You are truly one of the neatest (down to earth) people on TV and I’m so very happy that you (as you put it) “accidently” fell into your line of work. You are truly a GREAT “CHEF” whether you have papers to prove it or not. YOU GO GIRL!!!…. and love that momma to pieces EVERY SINGLE DAY … as I do mine. My mom is 68 and I love her more and more each minute!

    Frist let me say that it is nice to have someone so close is an area that I love some much. I grow up in the Albany area and spent many wonderful summers in the mountain you call home. I enjoy all of your showes and watch 30 min. meals everynight after work.

    On one of your showes you mentioned attending a Girl Scout Camp when you where younger. Was that camp “Camp Little Notch”? I myselt attended that camp when I was between the ages of 7 & 14. Both of my daughter have also gone that CLN. We all love that camp. Even my Husband, because we still go their for Family Camp on Mermoral and lobor day weekends.

    Now here is the bad news. The girl scout counel is closing the Camp. No one is saying whether they are closing the camp for good or just until 2010. I was hoping that CLN still ment as much to you as it has to somemany girl young and old. If there was anything that you could do to help us save CLN I would greatly appreasate it.

    You are the most down home person I think I have ever meat. Please contact me with any sugjestions to help CLN

    Dear Rachal, I love your show but who dose’nt?I am 47 year old woman. And in 2001 I took the plunge and had a gastric-by-pass. I weighed approx. 385lbs. and in one year I lost 200lbs. well thats great and all but I wish like heck that I did’nt do the surgery.My health today is one the line and I feel like I’m slowing dieing!!!!!! Ya I guess I look great as my friends say but I feel terrible. I don’t eat on a daily basis because of the ulcer in my stomach that came
    dirrectly from the surgery. I’m trying to find
    a doctor who cares and can help me get back to life. I can send pictures and I even have some viedo I can send. My goal is to help people to realize this is not the answer…. Two of the people that saw me had the surgery and lost their lives. It is a very serious problem and it concerns me that people think this is a quick fix and let me tell you it is life changing. I tell anyone that you go into surgery with a mind and stomach that thinks the same and you come out with the same brain and a stomach changed forever… Thanks for listing and being you, your great…

    The shorter haircut on the newer shows is a definite plus for you.

    Perhaps in earlier days the long thing was good for you, but at this stage of your career (like none of is still 20, right?) I feel the short cut is for sure fresher and more thinning.

Finally they were gonna send me to the G.I specialist at Rush Copley in chicago. Well My doctor decided to check one more thing. Well I found out that I have celiac disease. Which means Gluten free diet. I hate it. Do you have any ideas as to what to eat? My list is very short. I tried gluten free pasta and I can not stand the smell. Please help me.

    I wanted to tell you that nothing could interrupt my 1 hour lunches when your show was on but the season on e-tv has finished :(

    I am a huge fan of yours and consider myself to be quite the cook as I cook for my family every day cos I’ve always had a passion for food. Women my age go to the malls and go crazy for clothing sales. I go crazy for the house and home sales and I love kitchen gadgets.

    So I hope your new season comes on air soon for us as lunchtimes are just not the same and all the best with your show. I really hope that you come to South Africa to visit soon. Cape Town has the best mountain view and the best wines in the world.

    I thought I would let you know that since my heart attack in July, I have been watching your show while I recuperate. I am not the cook, but my wife makes your recipies. We just tried the mahi mahi fish tacos with the purple cabbage and it was great! (and I didn’t like cabbage). Now I have to go back to work on Monday, just when your new season starts…I will have to DVR your shows so I can watch!     I love Rachel, but someone…PLEASE tell her to stop drinking tea to soothe her throat. While tea may feel good going down, with continual use it actually dries up the vocal chords and that’s why her voice is sounding so hoarse all the time.

    Go with warm water and lemon only and things will improve soon.

    Rachael,loved the chicken cutlet braciole. Of course I substituted some of the ingredences. I had just finished making homemade puree with a “smarty pepper” included , I only used parsley and garlic in the stuffing and deglased with chicken stock. It tasted fantastic! I’m 71 yrs young and I love to cook as do my son and granddaughter. Thanks for all you teach us. Yes I am still learning!

    Rach, I am a Speech-Lang Pathology grad student and yesterday I saw Paula give you items for your throat. I have a Voice Disorders class right now and am sending you a link to info on hoarseness. For instance, did you know that holding the phone to your shoulder while you talk can be a cause of hoarseness. I can so see you doing that at home while you are making dinner.     I wish for the blessings of God for your 40th!!! You will never know how important your shows have meant to me!!! On my birthday, October 30 of 06, I went into a coma. My husband, trying to stimulate any response, always put on your 30 minute meals, my favorite program! After “waking up”, I watched Rachael, Rachael, Rachael!!! I was not a bad cook before, but now, I can whip up more than ever, with new knowledge, tips and recipes, and my husband is always pleased!!!
    I thank you for being you, and for the shows during the recovery, and and now, your TV show!!! I took homeconomics for six years in Junior and High school, and none of my teachers were like you, thanks for making it fun to learn even more!!!

    Happy birthday, i am now 42 and did not know if i would see it. Back on march 13 2008 my sister , 10 month old grand son and i were in a head on collision . the lady was running from ther cops and hit us going 120 mph. and we were going 19 mph. i am now limited do to savere nerve damage to my left foot . my pelvic bone was broke , hip socket shattered and hip bone broke ,. now my right foot does not lift and i have to wear a brace , and my foot and leg is loosing sensitivity. i am now trying to also diagnosed with posttramatic stress disorder. I am thankful we all are alive and my 42 nd birthday was septer 2, Did not get any thing because we almost lost our home do to the accident but i am thankfull to be alive even though we have no money to do any thing. god bless and happy 40th birth day ….

    I have been concerned about your voice loss for a while and, after watching the show with Paula Abdul when she gave you the remedies it reminded me to write. I am a Speech Pathologist and one of the things I treat is voice disorders. Your voice could either be indicating reflux (even if you can’t feel it!) which can be very serious or an inefficient use of your voice. Please make an appointment to have the reflux checked out (scoping and/or a Barium swallow test) and also with a Speech Pathologist who specializes in voice disorders. I am a huge fan of the show and wish you the best of luck with your wonderful voice!

    I watch your show EVERY night (6-7 or half at least, as I am usually preparing dinner).

    I LOVE you because you are basic without crazy ingredients we have to go to special stores (most times) to go buy. Honestly, which I know you would approve: I do substitue some crazy cheese with a normal cheese I have on hand.

    So, as a many hour-a day lots of days working woman I was explaining you to my Scientist sister who is in my same boat. She never heard of you. Well, she heard of you but does not watch you because she probably works even more then ME! And travels LOTS.

    I explained you to her and she was excited because, yeah, we want to come home and fix dinner as fast as possible (because, yes we still fix dinner even though we are working women) as well as our husbands.

    Well, I was SO excited to know what to get her for her birthday…one of your cookbooks! I sent it via Amezon.com and never heard a word! So finally, 10 days later I ask about it and she says she never got it. I email her proof from Amezon that says they put it next to her garage. Well, so they do a frantic search and low and behold…they find it! Buck, the new boxer chewed your first 5 chapters (she said they must have been good) and the rest they found by her bee hives several yards away (she is an Entemoligst in bee speciality).

    So…just to let you know…I was SOOO pissed. But I know you love dogs so would understand! The delivery guy left if where only the dog would find it. My fault, I wanted it to be a suprise and did not let them know in advance to watch for it and they are never home.

    I will be sending her another one…to replace it because she said she was so upset she was going to buy it on her own.

    This is from Oregon to Utah…

    rachael, i didnt know you were a virgo, i am too. my b-day was aug 28th. im 33 now. yes i know your 40, but ill catch up. my 2 year old has watched you on tv since he was 5 months old. he calls you ray ray cause he cant say your name. he was caught in the kitchen getting out ingreidiants of all sorts saying yeah ray ray, flour, cocoa, herbs you name it was everywhere. he went thru 2 bags of flour, i found evrything mixed together, cocoa in my baking powder. it was a mess. i do a lot of baking and cooking for my four sons. 15, 11, 2, 6mos are their ages. and i have 3 german shepherds. my husbands in the army and is away all the time so i try to keep myself busy. sorry i typed too much, i get carried away somtimes. but you cant possibly have time to read this anyway. happy belated b-day, have a great day. thanks anna.

    Very Happy and very belated Birthday from both Curtis and myself. BTW Curtis is my little hot dog - a Toy Longhaired Black and Tan Daschie. I would have sent you B’day greeting much earlier; however, Curtis just hasn’t gotten the knack of telling me such important things, afterall he is a daschie is always about him - lol. The story reagarding Spirit touched me so I have decided to make a personal contribution to the Animal Shelter in Manchester, NH the week before Christmas. Ironically they have no idea I am going to do this. I am a bartender and decided to save all the redeemable and recyclable bottles from the bar and take the proceeds for the donation. So far I have reached a good $600 and expect to hit close to $1000 by December 15th. BTW if you are ever in the Manchester, NH area and want an excellent martini stop in the Airport Diner on Brown Ave 1.25 miles from the Manchester Airport. My boss has dubbed me the Martini King - lol….

You combinated 2 of ower recepis on meatbolls, but we dont eat it like you did it. You forgot to haw onions in the meatballs, and the sauce is don om milk and soya and is served whit bolied potatos the pikels and lingonberry jam. If you are serving the meatballs whit pasta you fry them and just have ketchup to that.

    My granddaughter and I have been watching you since day one of 30 minute meals. We talk about our Rachel, and my husband refers to you as my girl and my daughter gave me a years subscription to your magazine. I need ideas how can I cook all the items I need to for Thanksgiving from a wheelchair. My husband has a table set up at my level with two electric skillets and the microwave.That is how I cook and I love to cook.What could I cook earlier than would be okay heated the next day, ideas how I can get it together. I guess I should just give it up and not worry about it but I have always made the dinner.

    I have watched you show for many years and have several of your cookbooks. Last Christmas I bought a two piece pan set. It was a cast iron skillet and another smaller pan. The first time I used the skillet the enamel starting poppping while I was cooking. I was very disappointed with the quality of the cookware. Someone suggested that I contactg you to tell you about this. With the hub bub of the holidays I never did take them back for a refund. I thought I should let you know that some of your products might be defective.

    I was watching your show today 9/30/08 on 30 minute meal you were cutting leeks and put them in water you then said that you had to clean the board before you cut anything else. You then cut the carrots, cabbage and meat and left all the dirt on the cutting board you never clean the board you then proceeded to add everything to the pot. I been watching your show for a long time and I was disappointed with what happen.

I have a problem though…At 39 I had never had a cookware set of my own, everything was hand-me-downs. For Christmas my parents bought me your cookware and I absolutely love it but one of my pans has warped. I have sent many, many emails everyplace I could think of and no one is responding. I just wanted to comment on something I just read, about you have a lump in your throat. I too smoke and have just been diagnosed with throat cancer. I have cancer of the epiglottis. I am now waiting for the hospital to call me when they have me scheduled for surgery. They said they think I have found it early. I am scared to death to go through this, but after reading your story of your problem, it made me feel that I wasn’t alone. I am so glad your diagnoses was cancer free, you are so lucky. When I first started I made this recipe of yours were you grilled veggies and portobello mushrooms mixed in with couscous and steak over it. You marinated the portobellos in a great mix and then mixed it in with the veggies and couscous. We did not print it and have tried to replicate it but can not. PLEASE help. We searched your site and food networks for hours trying to find it!!!!

I’m asking this because I have noticed that your voice is hoarse a lot and I know of a woman who had a hoarse voice for a long time and found out it was because of a lump on her thyroid. She had her thyroid removed. I’m not a doctor or anything but I thought this was a question worth asking. Maybe it’s just your voice but if you’ve never had this checked, it might be worth checking.     Hi, my husband and I love to cook; but live in the Virgin Islands, so things like ricotta cheeze not always available..so we had made spinach/artichoke dip with cream cheeze and used that when we made your vegitarian Lasagna using egg plant…we will NEVER look for ricotta again! Anyway i loved your show today[which i watch daily] and my daughter is always making fun of the way i dance[she says i am right up there with John Travotla]. I cannot do those moves of today. She also thinks my hair is a joke, she says i am something right out of the 80’s. She gets embarassed to go to the mall with me.     I am making Sausage, Pepper and Onion Stromboli out of your Just in Time cookbook for dinner tonight. And there is no onion in the ingredients or in the method!! I have added some while the peppers are softening because that is where I think they should go. I know the recipe will turn out because all of them do.

    Hi sweetie i tried your hard boiled egg instructions and the yolks just weren’t cooked all the way through. Here’s a recipe that i found in the reader’s digest “How to do just about anything” book.

    cover eggs with cold water. bring just to the boil, then reduce heat to simmer-cooking eggs in boiling water toughens them. should an egg crack as the water boils add a pinch of salt. for soft cooked eggs, simmer 2-3 minutes (depending on the size of the eggs), medium-soft 3-4 minutes, hard cooked eggs 15-20 minutes. drain the eggs and immmerse in cold water to stop the cooking. refrigerate hard cooked eggs and use them within a week. pencil an X on a hard cooked egg to tell it from the uncooked ones.

    Rach, I cannot believe you are letting your husband suffer with unibrows! Not this day and age. Have him get Laser hair removal.
    It is 6 treatments and for the hair between the brows there is NO pain. The only pain I had was above the lip but I am still glad I did it. No more worries!

My comment to you was that everytime I watch your show in the afternoon, I keep thinking how neat it would be to have a side kick on your show that answers some questions or to laugh at your little jokes. You know just sit in a chair next to your audiance and have a mike in hand like Ed McMahon or Paul something from David Letterman. Sometimes you say to talk among yourselves while your pouring out hot water from your pasta dish and i can be with the mike and saying funny little quirks like watch out Rach your gonna get a pasta facial. Or sometimes you say something about bacon and no one claps I could say something funny about how everyone likes bacon or just something to break the ice. What do you think?

    OHLA…Hey, I just wanted to thank you! I really enjoy your 30 min. meals. What I do is watch your show and then dig for simular items in my pantry and try to match what your cooking. I have done this many of times and it really works. I actually can make something edable out of what you have shown me on the show. Although I have made my version seems like it all about taste. Thank you for actually teaching me how to put spices together and making food very tasteful.
