Mario’s Breakfast Tips Posted by Mario Batali on September 18, 2008 | 7 Comments

Getting going in the morning with a real breakfast is easy with these tips and recipes from Mario Breakfast tips: - These recipes are designed to be cooked in one pan, which makes clean up a little less of an issue. Maybe this is the meal where you give the kids a pass on doing dishes—save it for dinner, when there’s a lot more to do. - You can get a lot of the ingredients prepped the day before for making omelets and my Sausage and Cheese Scrambler. Chop the veggies and grate the cheese, storing them in plastic containers. That way you can set up like one of those omelet guys on the cruise ships and bang out the eggs with great alacrity. And fast, too. - Always let the pan get hot before adding the eggs, allowing the eggs to set a bit. If the pan isn’t hot, the eggs will stick to the bottom. If you want to cook the eggs slow, you need to add more butter than usual to keep the eggs essentially floating above the pan. Then you can cook them over medium-low heat while stirring continuously. - If the pan has a lot of egg stuck on the bottom after cooking, soak it in water for a an hour or so. This will make clean up a whole lot easier. - Have the coffee set up the night before. That way you have one less thing to worry about and can just hit the switch the next morning.

Here are a pair of great breakfast treats:

These spicy guys will wake you up in more ways than one. The other great thing about this dish is that it serves well at room temp so there is no rushing around like catch can guy when the eggs are finished. They can just sit on the table till everyone is ready to eat.

This hearty breakfast takes that attitude into account. It may not look pretty, but it sure is tasty and, since you cook it all in one pan, it’s a snap to prepare.

All the receipts are so exciting, but when I watch ALL the cooking shows one thing I have noticed is missing-No one ever mentions washing hands. Some food shows hosts come into the kitchen area after shaking the guests hands and go right to picking up pieces of meat, etc. One food star is constantly touching her hair and pulling her hair behind her ear. I have a problem with this action.
With the stress being on clean food, is not clean hands that touch food paramount?
I do not want someone else to touch my food and their hair or someone elses dirty hands, after touching all that we come in contact with on a daily basis? No I am not OCD, just like clean in the kitchen. Thoughts…..

Thank you so much for bring this up. I’m not O.C.D. either, but I sometimes get turned off with the cook touching things other than food. It’s not a heathy thing to do! I new I wasn’t the only one who noticed this and not emptying out all the ingredients bithers me too!

Gee… I wonder how people survived before soap or antibacterial sanitizers were invented? There is growing research out there that the increase in asthma, allergies, and super bugs is due to our obsession with cleanliness. I’m not saying don’t wash your hands before you start cooking or after touching raw meat, but seriously… you’re getting more germs on the bottom of your purse by sitting it on the floor of the restaurant, your car’s steering wheel, door handles, and touching the keypad on your local debit machine than you are from a chef who pushes her hair out of her face.

did anyone see the program that the parents were able to put babies to sleep with a big glove on the back of the baby so it feels like a parent has her hand on the back–

Yes, ?i remember that program. It was basiclly a glove that was filled with ?. The parent heated it up- no too hot- then lay it on the baby’s back. You can make your own- extremely easy. Get a cloth bag or sew 2 terry washclothes together. Fill with lentils, any other dry bean, close top of bag. Warm it in the microwave, shaking halfway through. make sure it isn’t too hot for your baby. Also good for an adults heating bag. Reusable- but don’t wash it without taking out the beans!
    Hope this helps,
    Take care,

I thoroughly love your show! If I can’t catch at the 10am slot I do so at 2pm! You have made cooking for me so much more enjoyable! I am also an “eyeballer” so its difficult to give receipes to friends. I too have a wonderful Mom who taught me to cook when I was 10yrs old! Thanks for being such an inspiration and a dog lover like myself! One question, how do you cook chicken to be moist? Is boiling it better than baking it? I need a few tips. Best of luck to you in upcoming seasons! You really are great!
