I never make candy for the holidays. Its not my thing. Last year I made your 5 minute fudge recipe in a variety of flavors. The wreaths turned out beautifully and I ended up giving them as gifts to my neighbors and family members. Thanks!

I make your x-mas wreath fudge for all of my neighbors, the kids’ teachers, and for family and friends every year. I have been doing this now for about 5 years and every year everyone ask if they will be receiving some. But instead of using a round cake pan, I use a bundt pan, that way the hole is alrady there and you don’t have to mess with cellophane or the can. I also crush up arabian candy and sprinkle in the bottom of the bundt pan to look like little ornaments. I then add a little bow out of ribbon and stick it in the wreath with a broken tooth pick. It really looks like a wreath and everyone loves it and they can’t believe how easy it is to make when I tell them.

I watched your show for the first time on Nov. 26th. I’m a teacher and I’m not home during the day. I’ll have to set my DVR now. I decided to try to make the pear galette. It was delicious, but the recipe called for 4 tablespoons of butter divided, but only gave directions to use 2 tablespoons. Was the number 4 a typo?

I too want the chocolate rugelach reciepe. One reader suggested the cinnamon rugelach reciepe, but the two are different. The chocolate one is made with 2 pie crusts, butter and chocolate. The cinnamon one you have to make the cookie dough. It might be interesting to try the cream cheese instead of butter in the chocolate one.
Does anyone have the chocolate rugelach reciepe?????

That’s Shallota Flavor Spaghetti
Serves 4
Rachael says, “I make this ALL THE TIME! It is an absolute FAVE! Made with 10 shallots per pound of whole wheat spaghetti, you cannot believe the flavor of this pasta dish. It’s like a bowl of French onion soup, hold the broth. It’s a knockout. Serve with a spinach or arugula salad on the side for a simple supper any night.”

Ingredients
* 1/4 cup extra virgin olive oil (EVOO)
* 2 cloves garlic, finely chopped
* 10 shallots, halved, then thinly sliced
* Salt and black pepper
* 1 pound whole wheat spaghetti
* A generous handful of flat leaf parsley, chopped
* 1 cup grated Parmigiano Reggiano cheese
Preparation
Heat the EVOO, four turns of the pan or about 1/4 cup, over medium-low heat in a high-sided skillet. Add garlic and shallots to warm EVOO. Season with salt and pepper, then gently cook to caramelize them, 20 minutes, stirring occasionally.
Meanwhile, heat a large pot of water to boil for pasta, salt the water very liberally, then add spaghetti to rolling boil. Cook to al dente.
Add three ladles of starchy pasta water, about 1 1/4 cups, to the shallots and stir.
Drain pasta and add to shallots. Add the parsley and cheese and more black pepper, to taste. Toss 1-2 minutes for liquid to absorb and serve. WOW! Talk about yum-o!

Come on. Give us the amounts on that rugelach recipe and oven temperature and how long to bake. It was a GREAT idea but too many things missing. I wrote the show and have gotten no response yet. On today’s show,(12/11/2008) the winner of the cooking contest made chicken cordon bleu and didn’t wash her hands after rolling the chicken. I loved the recipe and did copy it down.

I thought I saw an appetizer a few weeks back that involved lining a bowl with plastic, putting two packages of Boursin cheese, basil leaves, pesto and I think something red for the Christmas look, that you then put in the refrigerator to chill. When ready to serve you invert the bowl onto a plate and the decoration is at the top. I can’t find this listed in the recipes. Was I watching a different show? Thanks for the help

Gabrielle Union’s Candy Cane Cookies
Ingredients
1/2 cup butter, softened
1/2 cup shortening
1 cup confectioner’s sugar
1 egg
1 1/2 teaspoons almond extract
1 teaspoon vanilla extract
2 1/2 cups flour
1 teaspoon salt
1/2 teaspoon red food coloring
1/2 cup crushed peppermint candy
1/2 cup granulated sugar
Yields: 2 1/2 to 3 dozen cookies
Preparation
Preheat oven to 375ºF.
In a mixing bowl with a hand mixer or the bowl of a stand mixer fitted with the paddle attachment, mix the butter, shortening and confectioner’s sugar on medium speed until light and fluffy, about 1 minute. Add the egg and extracts to the bowl, and mix to combine, scraping down the sides and bottom of the bowl.
Turn the mixer speed down to low and gradually add the flour and salt to the bowl, mixing until incorporated, about 30 seconds. Turn the mixer off, scrape down the bottom and sides and divide the dough in half. Remove one half of the dough from the bowl and add the red food color to the remaining half. Mix or knead it in until the color is blended into the dough evenly.
To shape the cookies, portion out about 1 teaspoon of each color of dough and roll them both into small logs. Pinch the logs together and give them a twist to create the spiraling effect of a candy cane. Place the shaped cookies onto an ungreased baking sheet, curving one end over to look like the hook of a candy cane. Once all the cookies are shaped, bake them until set and very light golden brown, about 9 minutes.
While the cookies are baking, mix together the crushed candy and granulated sugar. As soon as the cookies come out of the oven, sprinkle them with the candy sugar. Let the cookies cool on the tray for a few minutes so that the sugar can stick to them then transfer them to a rack to cool completely.

I love all your shows. I even tape your talk show and watch it it the evening. I have been a fan of yours for a long time. My husband was laid off in November so it has been very hard for us. i have seen our pantry go down a lot. and more and more people are showing with the way money and job’s have been. i have been on the computer looking for coupons to help. i am a client with our food pantry. i want to be able to give back some how. and i thought if i could find coupons to help out. and free samples it would be the best thing.

Rachel, my husband and I are praying for you and you NOT having to have the surgery. We were both laid off in September and don’t miss your show. He says you make him tired you are so upbeat, but he makes sure to watch. We have tried several of your recipes and love them all. We have one question, all our kitchen appliances are cranberry and chrisom red do you think you’ll ever have a line in the red venue? We do have some of you orange and love them. Let me begin by telling you I’m not to good on the computer, please bare with me. I really knew you way back when. I cleaned for you when you lived in the big white house by the Lake George club. I saw you one day at Suttons and you didn’t remember me. The next time I saw you was in the Harvest. I want to thank you for remembering little old me. You so graciously helped me with getting tickets for the show. I want to apologize for not writng to you sooner and thanking you. I loved the show and seeing you was great, even if you didn’t know I was there.
I saw you a few weeks ago in the Harvest. You sat at the bar and it was kind of obvious you didn’t want to be seen, so I didn’t speak (I’m sorry) I have been wanting to thank you for the past year for the tickets. So Thank You. I love to watch your show. I’m an awful cook and I wondered if I bought your pans and knives if it would help? I plan on seeing you in Lake George when you come to do your show.
