As I looked in my fridge this morning, the wind was a howlin’ through the empty shelves. I know I’ll go to the store tomorrow to shop for the long weekend, but in the meantime, why to make for dinner tonight was my big question. I spotted a carton of eggs and hello! My mind starting rattling off all sorts of meal ideas. Eggs are a versatile and economical way to deliver protein to your family, and depending on how you prepare them, it could be low-fat as well. Here are some delicious ideas for egg dinners. Give them a try next time you are trying to come up with something new and you are low on ingredients.

The Baked birds in Nest reminds me of a recipe I made back when I was in Brownies/Girl Scouts.. we took a slice of toast, cut a circle in the middle with a cookie cutter. Then we laid the toast in an oiled skillet and cracked an egg into the hole and let the egg cook in the slice of toast. I think that was the way it was done…too many years ago. LOL! If there were anyone who was a Brownie in the early 60s on this site, and remember the exact recipe, let me know…

my father maked the toast with the egg in the middle almost every saturday morning for himself! I never learned to like it, but it sure brings back fond memories of him. Thanks!
